Holding cabinets are used to keep hot product at a safe holding temperature from the time it has finished the preparation stage until it is served. They are not designed to reheat food. Food that is placed in holding cabinets can be either in bulk (steam table pans) or plated. Used primarily for banquet, buffet, or cafeteria service, the holding cabinet is a necessary piece of equipment to keep the product hot and out of the danger zone. It is, however, not kind to product quality. To reduce deterioration, food should be kept in the holding cabinet for the shortest period of time possible. The product should also be kept at a minimum temperature of 140°F (60°C).
The Atosa heated lighter weight aluminum unit uses less standing space then the larger stainless steel models.
